Avocado & Egg Breakfast Wrap

This is my avocado & egg breakfast wrap.
I actually had it for lunch, but we'll ignore that fact because it gives off breakfast-y vibes.
I don't know why, but I've never really been the biggest fan of avocado, but even I have to admit this wrap was GOOD. The way it combines with the sriracha and egg is just heavenly.
But anyway, I decided to make this and here's how you can do it too!

The Preparation
As you can see, there are a few things we need to prepare first:
It doesn't really matter if you don't have exactly these ingredients, you're welcome to adapt and make this recipe your own! Let your imagination run wild :).
But, here's what I used:
5 cherry tomatoes, quatered
A generous handful of sweetcorn
Two handfuls of mixed leaf salad
A plain white tortilla
1/2 avocado, sliced up into small pieces, around 5mm thick
1 egg
Sriracha sauce
And of course our seasonings: garlic, fajita seasoning, lime juice and chilli flakes. You can also add whatever you like here! I do something different each time :).
The Cooking
Now we've got everything prepared, it's time to cook!
I used an Airfryer to cook my veggies, mostly because I find it a LOT faster and I'm super impatient, but you can also use an oven to roast them.
Put the sweetcorn and tomatoes onto a tray, and add your seasonings: 2tsp garlic granules, 1 tsp fajita seasoning and a splash of lime juice. Place in the Airfryer and cook at 200 degrees for around 15 minutes, or until slightly blackened. Alternatively you can roast in the oven for around 25 minutes.
Whilst those are cooking, we'll get our egg ready. Fry the egg in a small frying pan for around 3 minutes (until it's not weird and jelly-like anymore). I like to put a lid over my pan, It makes the top of the egg cook really well without drying out the bottom.
You're also gonna want to stick your tortilla in the microwave for around 10 seconds when the veggies are looking nice and toasty!
The Assembly
Congratulations, we made it to the plating stage!
Place your hot tortilla onto a plate, and dump (or carefully arrange) your salad on top. Then sprinkle over the roasted veggies, they add such a pretty colour! Add the avocado, making sure it is spread out evenly, and then gently place the fried egg in the centre.
Drizzle over with your sriracha sauce and chilli flakes for a bit of extra spice and pizazz.
If it's taken you too long and the food has now gone cold, stick it in the microwave for 30s like I did!
