Banana Bread Oaty Bites

I am TERRIFIED of baking. It's one of those big barriers in my mind when it comes to recovery, which is weird because cooking is something that has really helped me to discover new things and push myself out of my comfort zone. Maybe it's because baking was one of my biggest passions before my eating disorder, so subconsciously baking again means letting go of a big part of my ED.


I just want to note as well, that even though this was a difficult step for me in my journey, it is 100% okay if it isn't for you! Each ED is different, we all struggle with different things, and we are all equally valid. I know people who baked all throughout their ED, and even used it as a coping mechanism, and they are equally valid as people who struggle with baking/ cooking.


Anyway, today I decided it was FINALLY time to start facing my fear of baking... well these aren't actually baked at all, so I will say it was more facing my fear of making sweet foods for myself to eat.


I've been really into autumn-y vibes and spices lately, so I decided to make these banana bread inspired oaty bites. They're super simple, only have a few ingredients, and I was honestly surprised by how good they tasted.


Let's get to it.


Preparation


First you're gonna want to find your ingredients. You will need:

- 1 cup of porridge oats

- 1/2 a banana

- 1/2 cup of mixed nuts (or any kind of nut you want)

- 3 tbsp honey

- 1/2 tsp cinnamon

- 1/4 tsp ginger

- 1/4 tsp nutmeg

- 1/2 tsp vanilla essence

- pinch of salt


Don't worry if you don't have all the spices! Feel free to switch it up a bit with different flavourings and additions :).


Assembly


There's actually no cooking in this recipe so I didn't really know what to call this section. I guess we're just assembling all the ingredients together, hence the name!


Simply chuck all of your ingredients into a blender/ food processor and blend until it forms a dough-y consistency. It kinda looks like cookie dough!


Now you just have to shape them! If you're going for a cute shape, chill the mixture for 30 minutes first and then use a cookie cutter to cut into shapes. Alternatively just use your hands to roll balls of the mixture.


Leave the finished bites in the fridge for around 1 hour to firm up, then you can store wherever you'd like!

I'm loving your recipes and your honesty. I'm a recovering alcoholic and years ago I found great comfort speaking to my college roommate about her ED. We shared a lot of the same obsessions. It was the 1st time I felt better about myself.

Keep doing what your doing here and know that your helping others. I've never been good at cooking myself. But I'll be trying your recipes. Much love from the 🇺🇸.
